{"id":31,"date":"2012-07-28T07:00:16","date_gmt":"2012-07-28T07:00:16","guid":{"rendered":"http:\/\/dads-kitchen.com\/?p=31"},"modified":"2013-11-22T19:25:51","modified_gmt":"2013-11-22T19:25:51","slug":"31","status":"publish","type":"post","link":"https:\/\/dads-kitchen.com\/?p=31","title":{"rendered":"Enchiladas"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/dads-kitchen.com\/wp-content\/uploads\/2012\/07\/Untitled-11.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" title=\"Enchiladas\" alt=\"\" src=\"https:\/\/i0.wp.com\/dads-kitchen.com\/wp-content\/uploads\/2012\/07\/Untitled-11-268x300.jpg?resize=190%2C176\" width=\"190\" height=\"176\" \/><\/a><\/p>\n<p>Yield: 6 servings (2 enchiladas per serving)<\/p>\n<p>Prep Time: 30 min Cook Time: 35 min<\/p>\n<p>This simple recipe for beef enchiladas is a delicious, family-friendly meal.<\/p>\n<p>ingredients:<\/p>\n<p>1 pound lean ground beef<br \/>\n1 1\/2 cups diced onion<br \/>\n1 1\/2 cups (about 2 medium) finely diced zucchini<br \/>\n12 corn tortillas, heated or fried in oil to soften<br \/>\n2 1\/2 cups enchilada sauce, canned or homemade (see my <a href=\"http:\/\/dads-kitchen.com\/?p=23\">enchilada sauce<\/a> post )<br \/>\n3 cups cheddar- jack shredded cheese<br \/>\nServe as desired with: shredded lettuce, avocado, cilantro, sour cream<\/p>\n<p>directions:<\/p>\n<p>1. Preheat\u00a0oven to 350 degrees F. Spray a 9&#215;13-inch\u00a0pan with nonstick spray.<\/p>\n<p>2. Heat oil in a large skillet. Add ground beef; break apart with a spoon or spatula to crumble the meat. Saute the meat on<br \/>\nmedium heat until browned (about 5 minutes). Tilt the pan and spoon the fat out of the pan; discard. Remove cooked meat to a<br \/>\nbowl.<\/p>\n<p>3. Return pan to medium heat and add onion and zucchini. Saute until just softened, 3 to 4 minutes. Remove the vegetables<br \/>\nfrom the pan and add to the meat mixture; set aside.<\/p>\n<p>4. Add 1\/2 cup of sauce to the prepared pan. Spread it around so it coats the entire bottom of the pan.<\/p>\n<p>5. Assemble the enchiladas: Place tortilla on a work surface. Spoon 1\/4 to 1\/3 cup of the meat mixture down the middle.<br \/>\nSprinkle 2 Tablespoons of cheese on top of the meat. Drizzle 1 Tablespoon of sauce on top. Wrap the tortilla around the filling<br \/>\ntightly and place it seam-side-down in the pan. Repeat with remaining tortillas and filling until you have finished filling 12<br \/>\ntortillas. Place the tortillas side-by-side in the pan- it&#8217;s okay if they are all snuggled in there tightly.<\/p>\n<p>6. Pour remaining enchilada sauce over the top of the stuffed enchiladas. Cover the dish with foil and bake for 30 minutes.<\/p>\n<p>7. Remove pan from the oven and take off the foil. Sprinkle remaining cheese on top; return to the oven and let the cheese melt<br \/>\n(about 5 minutes).<\/p>\n<p>8.
